Former Soviet Union states though, when the Soviet Union split up, the former states to the west of the Caspian Sea joined UEFA and the states to the east joined the AFC. Kazakhstan subsequently joined UEFA.
The border between Europe and Asia is an imaginary line drawn using social and historical conventions, but considering Russia, Georgia, Azerbaijan, Turkey/Turkiye and Kazakhstan technically straddle the two continents then I don't see why they can't be part of UEFA.
Armenia is fully in Asia, but at a guess I would imagine they see themselves as more culturally connected to Europe rather than Asia given their history as a Soviet Republic.
Interestingly some people class Cyprus as being in Asia and not Europe although I don't think many people have an issue with them being in UEFA.
Israel play in UEFA because a lot of the west Asian countries would refuse to play them, so it's probably more about keeping peace than anything else.
