    I wholeheartedly recommend the Sorted Meal Packs app to anyone who will listen as it's great for creating meals that you normally wouldn't and it also cuts down on food waste. Last night made a herby courgette gnocchi dish. Roasted two finely diced courgettes, garlic and a red onion, mashed it up a bit, added creme fraiche, herbs, cooked gnocchi, a bit of pasta water to help create a sauce then grilled it with torn mozzarella and grated parmesan.

    Half an hours work but very, very tasty.

    Since it’s pancake day, I’m making pancakes for the main and pancakes for pudding.

    Traditional scotch pancakes for afters.

    For the main, I’m making boxty - an Irish potato pancake. I’m serving it with a creamy chicken and bacon filling, some salad and skinny fries.

    I’ve had it a couple of times in Dublin so thought I’d try to recreate it.

    Is this the Sorted.club or something like Hello Fresh?

    I’ve been really enjoying using either Hello Fresh or Gousto but don’t like their chopped chicken and nearly every chicken recipe I like has it included. I wish they gave you the option of getting normal chicken breasts and chopping them yourself.

    Not quite. They have a fairly good YouTube channel but this is an app where you can choose a “pack” of three recipes a week. You then tick off all the ingredients you have in the cupboard that the recipes use and it creates you a shopping list. All of the perishable items are used up over the three recipes.

    It’s a fiver a month for the app and also gives you access to digital versions of their cookbooks.

    Spicy Asian tuna fish cakes ( tweaked Gordon Ramsay recipe) 1 tin Tuna steak, sliced water chestnuts, sliced spring onions, chopped mushrooms, small chopped red chilli( seeds removed ) finely chopped kafir lime leaves, grated fresh ginger, sprinkling of fish sauce, salt and pepper. Mix together and bind with 1 whisked whole egg, 2 if needled. Fry in very shallow oil for a few minutes on each side. Makes 3 or 4 fish cakes. Very tasty.

    We did all these from sainsburys, all around 500 calorie. You could buy ingredients yourself or click add to basket and get delivered. Turned out really cheap and fun to do, they all take about 20 minutes

    I’ve got all the pinch of nom cookbooks, they are amazing if you’re trying to watch your calories.

    Naan bread , Pizza sauce rubbed on it , Grated cheese , Pepperoni , Red onion , Tomatoes , Air fryer for 5/6 minutes absolute heaven , All in prep time done and dusted under 10 minutes

    If you want a low calorie meal I have found these to be helpful

    The are protein noodles, around 25 calories per portion. Texture (slight al dente bite to them) of them can take a bit to get used to as is the smell, they have a bit of a whiff when raw but once cooked it goes. The same amount of normal noodles is 180 cals, so it is a significant reduction in calories just swapping these for normal noodles


    Only two things are infinite, the universe and human stupidity, and I'm not sure about the former.

    Morrisons stock these as well asking with the "rice" variant.
    They're certainly better than the cauli-rice & courgetti spaghetti abominations you can buy/make.
    You're right about the initial whiff when you open the packet, but a couple of minutes in simmering water then added to Bolognese/Ragù, you'd never know the difference.

    Brilliant stuff, got plenty of recipes to mix it up in the coming weeks. Managed to lose sixteen or seventeen pounds in the last fortnight through clean eating and being active every day and having a wide range of things to eat will hopefully make it a lot easier to keep it up

    Trying Tom Kerridges healthy chicken tikka masala tonight. Chicken crown has been marinading overnight and just about to go into the oven at 120C for two hours. Will be cooled then blowtorched before making a sauce.

    Edit: absolutely fantastic. Best curry I’ve cooked and not far off the best I’ve had. Worth the time and effort.

    I've got coeliac disease and the GF pizzas you can buy are horrible.
    This recipe works with normal flour 2.
    250g of self rasing flour 260g of plain Greek yoghurt.
    Mix with a spoon until combined then get your hand in an kneed till you get a decent dough.Roll out and bake in a pizza tray for 5 mins,then get your sauce,cheese and toppings and cook till the cheese is golden.

    Have you been to gf cafe on Dalry. Been a few times with my cousin as she is celiac. Its brilliant. Pasta, bagels, waffles, cakes ect. You wouldn't know it was gf

    Right, this wasn't from a recipe so feel free to adjust quantities to taste. Been using all the tips from all the recipes I use to make a chicken pasta Alfredo that’s around 500-550 calories per portion.

    Serves three (I cook for two but always make sure there's leftovers for lunch the next day)

    2 medium sized chicken breasts, skinless, any bits of fat trimmed off
    175g dry pasta
    4x heaped tablespoons fat free natural yoghurt
    1x heaped teaspoons low fat butter style spread
    2x shallots, finely diced
    3x cloves of garlic, finely diced
    200ml chicken stock
    1x teaspoon (heaped) cornflour)
    Grated parmesan (the stronger the better)
    Splash of skimmed milk
    Tenderstem broccoli
    Chicken coating:
    Smoked paprika
    Onion granules
    Garlic granules
    Salt
    Pepper
    Dried Oregano

    METHOD:
    - Trim and butterfly your chicken breast. Use about 1tsp of your herbs and spices and lightlycoat the chicken in them. Season and fry in a frying pan on medium heat with a couple of sprays of 1 calorie cooking spray. Fry on both sides til slightly charred and cooked through then transfer to a plate, cover with foil and leave to rest.
    - Cook your pasta in salted boiling water as per packet instructions.

    - Fry your diced shallots in the chicken pan with another spray or two of spray until translucent and add your garlic.
    - Add the heaped teaspoon of low calorie butter spread and the cornflour, mix well. Add your stock and a splash of skimmed milk. Bring to a boil, reduce to a simmer and leave for 2-3 minutes to thicken. Season with salt and pepper
    - Add your parmesan to taste into your sauce and stir well. Be sparing with it as we'll top the finished dish with a little parmesan as well for flavour.
    - Remove your pan from the heat and set to one side.
    - Once cooked, add a couple of cooking spoons of pasta water to your pasta sauce and stir in. Drain your pasta and keep it to one side. Boil a kettle
    - Two tablespoons at a time, add your fat free yoghurt into the pasta sauce. Taste, adjust seasoning and stir your pasta through. Put back onto a very gentle heat to warm through again.
    - Fill your pasta pan with water from the kettle and boil some tenderstem brocolli for three and a half minutes on a rolling boil.
    - Slice your chicken.

    - Plate your pasta, top with some of the sliced chicken and a small grating of parmesan and plenty of black pepper. Top with your brocolli.

    Used the first picking of the rhubarb in the garden to make a rhubarb and custard crumble tart, slightly amended from a Jamie Oliver recipe on his YouTube channel. Used skimmed milk for the custard and sweetener in the rhubarb rather than sugar to lower the calorie level, but also topped it with crumble topping.

    A scoop of light vanilla ice cream, strained the juice out of the rhubarb after stewing then reduced it down to a syrup to drizzle over it and it was absolutely mega.
