Where are you staying?
We went to Koh Samui around 10 years ago and stayed in Bophut which is a nice village with plenty of bars and restaurants but the beach is average.
We had a day out zip lining in the forest, which was superb and safe, and we did a boat trip to ang thong national park, which has spectacular scenery. The rest of the time I was drinking Chang beer.

If you have the opportunity to visit Kho Phi Phi, visit Kho Phi Phi.
It's my favourite Thailand island, so far.

There was certainly taxis available when I was there. See if there's a taxi app available to make it easier. I don't remember there being buses but there are pick up trucks with benches in the back that travel about the island.
As for other things to do, Koh phangan and Koh tao aren't too far away by ferry and are meant to have decent beaches/snorkeling.
