    Barbecue Cooking Tips

    Hopefully the season for long sessions in the garden accompanied by barbecue food is just around the corner. Just invested in a bigger oil drum type and looking for some tips and ideas to cook on it.
    Been doing the same, sausages, burgers, kebabs and steak for years.
    What does everyone else do?

    I like chicken fillets marinaded in soy, honey & garlic. Pork in chili (dipping) sauce, honey, garlic & melted butter.

    *Cooking with honey/sugars will make the grill messy*

    Caveman steak, a lump of meat (I prefer cuberoll/Ribeye) place dry (apart from seasoning) and directly on to an established lumpwood charcoal BBQ, straight oh the coals. Let it colour on each side then let it rest. Probably one of the best steaks I've made for myself.

    Thick pork chops brushed with a homemade apple & rhubarb glaze.

    Lamb chops or (cheaper) lamb rump sliced, marinaded in olive oil, garlic, oregano, a tiny touch of cinnamon and lemon juice. Lovely when served with a Greek salad (little gems, cucumber, olives, feta honey & cider vinegar dressing) and homemade flat breads.

    Pineapple or apple rings dusted in cinnamon/sugar are a tasty treat for afters.

    Pork Fillet is always a nice thing to do, and it's cheap when compared to other larger cuts.

    Get a banana. Cut a few holes in it and stick chocolate buttons in. Pop it on the barbecue for long enough to melt the chocolate.

    Another nice "for afters" suggestion.

    Chicken Burgers.

    Lots of recipes for marinades online. I tend to prep a few different varieties (BBQ / Cajun / Mexican style) and cram a few chicken breasts in with the marinade in zip lock bags inside the fridge for a few hours prior to grilling.

    Slice the banana down the middle, but not all the way through. Place a flake in the middle, wrap in tinfoil then bbq.

    Get a banana, peel it, throw it in the nearest bin, eat the chocolate

    I've been put off bananas when the mutter-in-law made a dish consisting of chicken breast stuffed with curried banana. I think it was meant to be curried plantain but "they're virtually the same thing, eh!"
