Mainly because of home advantage. Most recent results and form suggests otherwise.

We've only won one of the last 9 derbies at ER (and Hearts win more derbies at ER than we do) so home advantage isn't really a sound basis for those odds.

I’m not saying that home advantage actually applies here. Bookies will have algorithms and formulas for the thousands of bets they offer. It won’t be a guy or a team of guys sitting in an office working out the odds for every game etc.
