My partner went to Gordon Ramsay’s place in the St James Centre yesterday. She said that at £18 it felt quite steep but that it was top notch, was actually worth every penny, and she’s desperate to go back again with me.

I had a burger in Ipanema a few years ago and it has never been equalled.
I was asked how I would like it cooked, I said medium rare, and it was the tastiest thing and I don't really like burgers.

I used to like Man On Fire in Portobello but it's hardly open now and wasn't great at all last time I ordered from them.

This is going to sound mental, I'm burger fiend, you can find lots of good ones all over town, bread meats bread a prime example, the greatest chicken burger I've had in Edinburgh was surprisingly in the cafe in Tesco at Hermiston Gait, so much so I made a couple of pals go too so they could acknowledge my views, we all agreed it's dynamite

Glad someone else mentioned a place outside Edinburgh. I once met 2 American guys on a plane who invited me to a restaurant they'd opened in Berlin. They claimed that the meat they used for their burgers was so fresh that they were happy to prepare the burgers rare. I love a good steak that a decent veterinarian could bring back to life but have either only eaten mincemeat completely raw or fully cooked, so I couldn't wait to take them up on their offer. I wasn't disappointed, it was by far the best burger I've ever tased. Crispy brown on the outside and juicy on the inside.
If you're in Berlin and like burgers, then pay a visit to "the Bird", you won't regret it.

Tbe food standard agency doesn’t allow rare burgers to be served in Scotland, pretty happy with that to be honest.

I can see the problem if the meat is bought and stored before cooking but can't see a problem if fresh beef is ground directly before cooking ala steak tartare. The Germans also do it with minced pork (Hackepeter) served on a bread roll with salt, pepper and onions, it's delicious and thus far hasn't killed me.

I saw that on a menu in Berlin a few years back and was nervous about trying it. A couple of German guys I had met assured me it was absolutely fine if prepared correctly and we're confident the place we where in would do so.
It was delicious and I survived to tell the tale.

Steak tartare isn’t ground though, it’s finely chopped, it’s the process of grinding beef that makes it more unsafe to eat raw.

Luxford burger or El Perro Negro for me.
Earls in Stockbridge (and I believe about to open in Morningside) is good as well.

Not in town, but I recently had a Wagyu beef burger (with a slab of haggis) at Buenos Aires in Musselburgh - really tasty and felt decent value at around £15

I wasn't aware of that and would swear I've received one before but maybe I was on holiday at the time.
My understanding of it is that the middle has to reach a certain temperature to kill off all the bad stuff but this can be achieved while still keeping the meat pink.
To be honest, despite liking my steak rare, I'm happy with that.
Bread meats bread for my burger choice - although I've not been for a while since they took tatter tots off the menu. The Sunshine on Beef burger gets my vote, the burger does justice to the name.

Preferably somewhere that doesn’t insist on serving it in an overly sweet brioche ****ing bun!

Or a bun that just disintegrates in your hands and your left holding a burger and its mushy contents
