Chilli taco's
Bacon baguette done in air fryer
Eggs made in the George foreman grill

Looking for a change as I eat the same things all the time

What's everyone else's best scran ?

Good chicken wings are very easy to do.

Dab them dry with a paper towel.

Dry rub of salt, pepper, smoked paprika, cumin, onion and garlic powder.

Give them a light spray of cooking spray

Put into an oven at 160C for twenty minutes (line your baking sheet)

Turn

Same again for twenty minutes

In the meantime, put in half a bottle of Frank's Hot Sauce and a of tablespoon of salted butter in a pan and gently heat until made into a buffalo wings sauce

Take the wings out (give them three or four minutes at the highest temp if you want some gnarly charred bits)

Toss them in the sauce

Done.

Home made lasagne is also very easy and can be prepared the night before, make a bolognaise type sauce (I use a mix of a small tray of beef mince and the inside of three or four pork sausages crumbled and browned with the beef). If you make it the night before you don’t even need to pre cook the pasta sheets, just layer it up.

Cook for the first while covered in foil then add cheese and finish until browned.

Chicken in buffalo sauce is lovely! Had nice wings like that as a starter for a pub meal recently and they were the best part of the meal.

Never occurred to me to try and make them myself.

Home made fish and chips for us tonight, absolutely banging. Even better in panko breadcrumbs but the wife prefers golden.

Garden peas need to be Hibs green - anything else is overdone, a good rule of thumb for cooking any green veg - and finished with butter.

I thought about contributing to this thread pointing out that a slow cooker is a friend! I don’t do a lot of cooking really, but I did a chilli recently in the SC and it went down extremely well with the missus!

While I wouldn’t turn down chicken on the bone.. I do get your wife’s point. It’s preferable being able to eat everything in front of you rather than gnaw round bits 👍

I have the recipe saved in my texts, I can remember the ingredients but not the quantities:

1 red onion

10 grams of garlic
15 grams of chilli flakes

1 can coconut milk
1 tbsp Tumeric
1 tbsp Cornflour

I always put in more tumeric and chilli than the recipes calls for.

I did try it with chicken legs a couple of weeks or so ago but it was ****. So breast all the way (ooh er).

That’s for 1kg of breast which has fed 4 adults and 3 kids previously.

It goes pulled pork style, which I quite like. Like I said above, I tried with on the bone chicken the other day and it wasn’t good, too much fat and juice came out the bones and killed the flavours.

I cook the beans in a pan with butter, reduce the sauce right right down and add as much cheese the mrs will allow and then a drizzle of sriracha. On toast or a tattie.

Sounds lush

I attempted homemade bruschetta earlier on , Grill bread , Give it a wee rub with peeled Garlic clove ,Kumato tomatoes ( i find them pretty sweet ) seasoned with salt & pepper , Let that sit 5 minutes , Add wee bit olive oil , Some Parsley and just basically spoon the tomatoes on to the bread


wee tip that work for me , I don't refrigerate the tomatoes

At the risk of sliding off HibbyAndys original post, for those interested in the chicken wing and Brazilian chicken curry recipes you should look up Malagueta Chicken kebab recipes.
I came across it by accident when I was looking for regional recipes when the World Cup was on (I cook a dish from each country as the tournament plays out) and this dish from Brazil is one of my go to BBQ scrans.
It starts off similar to a Portuguese piri piri, no surprise given the links to Brazil, but the honey/mustard/vinegar glaze is next level.
Serve with ice cold Brahma.

That sounds great. I’m just thinking of the Corn beef hash I’ve had in the past, does it usually have potato in it? Ir am I imagining that? Always felt like it was an anglicised version of stovies when I’ve had it before.

My corned beef hash is boiled potatoes, fried onions and chopped corned beef, all mashed together then placed in a large Pyrex dish, the top finished with a fork leaving nice deep grooves then placed in the oven until top is nice and crispy. Served with baked beans and lashings of HP sauce, the same recipe my parents used,loved it as a kid and still do.

If you ever fancy a bit of a project for a rainy day, I used a day in lockdown last January to make a Berlin style doner from scratch - bread and all.

Made the sauces, got the salad done nicely and served with a really good smoked German beer. Really enjoyed making it, and it was absolutely delicious.

Boil your spuds for 10 minutes then drain the water. After they've cooled down chop them into slices about 4mm thick. Add a couple of table spoons of butter to a frying pan and fry some diced bacon and diced onion until the onion is soft then add the sliced potatoes. The trick is to fry low and slow, medium heat for at least 40 minutes turning the spuds about 4 times and adding salt and pepper. They're ready when about 2/3 of the spuds are brown and crispy.

Mix diced chicken thigh or breast with yogurt, garlic, harissa, lemon zest, salt and pepper. Fry that off in a nearly dry pan with some onion and a squeeze of lemon and use it to top a flatbread with a bit of salad and a drizzle of yoghurt.

How did it go?

Delicious. I added some smaller chillis which cranked up the heat a bit. Served it with rice & corn on the cob. Got a 8.5/10 from the mrs! Happy days

I have started using my Pressure King Pro a lot more recently, does anybody have one of these (or an Instant Pot)?

I love combining the frying function which you can start off some tasty rice or pasta meals by sauteing onions/garlic/peppers etc.

I’ve got one of them (PKP) and I barely use it. Can’t even say why as every time I do use it, I’m always happy with the results. Lucky if I’ve used it 5 times.

Glad the Brazilian chicken went down so well: believe it or not it’s not my recipe 😂

It’s from the High Protein handbook which you can download for a tenner or something: or pay £25 and there’s another half a dozen books with it. It’s all nutritionally balanced meals for health kicks or training. Or eating, doesn’t matter 😂

Bit of a one pot traybake this one but always goes down well:

Boneless chicken thighs
Chorizo (ideally the cooking stuff) cut into approx 3cm cubes
Par boiled baby new potatoes (cut in half)
Two red onions
Oregano
Zest and juice of one orange
Garlic
Salt
Pepper
Olive Oil

Cook in the oven low and slow, giving a good mix up every so often so everything gets coated in the orange and the chorizo oil.

Anyone ever had Flying Jacob? Really really tasty casserole style dish with chicken, bacon and bananas.

It was my grannies funeral on monday; she introduced it to me and I'd love to make it but my wife can't eat bananas. Big old dish to make just for myself :greengrin

I've had a Tefal Cook4Me for a while and never use the pre programmed recipe, I find it more useful for preparing an element of a dish with little washing up.

I used it to make a nice ragut with beef and pork for a lasagne the other night, made a bechamel on the stove and just layered it from there. Two pots to clean up, pressure cooked the sauce for a bit to break down the tomato and reduced it down so it was good and flavourful.

I find the best way to get good midweek scran is to plan and think ahead. Sunday I had lasagne (which I browned the meat for and assembled on the Saturday) and whilst that was heating up on Sunday, I diced some chicken thighs and made a basic curry paste and put two thirds of the chicken in to marinate. Cooked the curry last night with leftovers for lunch, but also made what will be the filling for a chicken and leek pie, so will just need to put in pastry and cook tonight.

When that’s cooking, I’ll make a basic lentil and veg bolognaise to put in the fridge, reheat and add to pasta tomorrow night.

I use the freezer a lot too so there’s always good basic ingredients to defrost and cook with, but doing half of the work the night before whilst your tea is cooking means you have much better food to look forward to.

Thanks for sharing this - made on Friday night, we loved it!! think I went slightly over on the spice, not sure if too much Franks sauce, but still managed to devour.

You can always tweak that to suit, but I do like a fair bit of heat in my wings. Glad you enjoyed it.

Jambalaya is a favourite in my household. Simple one pot dish and very tasty.

This recipe but use a spicy Chorizo ring, add extra cayenne pepper and chilli's.

Was doing some leftover cooking tonight - our Burns night supper was belated as my partner had a physio appointment and I was playing fives, but I had leftover haggis, four rashers of bacon, two slightly stale bagels and half a bag of spinach on the verge of going out.

Made what I'm calling Burns Benedict - toasted bagels topped with spinach, haggis, a rasher of bacon, a poached egg, home made hollandaise and topped with the crispy bits of haggis that were in the pan as a little crumb. Served with roasted asparagus which was also on the cusp of going out.

Absolutely brilliant. If it was in a restaurant or high end hotel on their brunch menu I'd be diving into it.

Was doing some leftover cooking tonight - our Burns night supper was belated as my partner had a physio appointment and I was playing fives, but I had leftover haggis, four rashers of bacon, two slightly stale bagels and half a bag of spinach on the verge of going out.

Made what I'm calling Burns Benedict - toasted bagels topped with spinach, haggis, a rasher of bacon, a poached egg, home made hollandaise and topped with the crispy bits of haggis that were in the pan as a little crumb. Served with roasted asparagus which was also on the cusp of going out.

Absolutely brilliant. If it was in a restaurant or high end hotel on their brunch menu I'd be diving into it.

I’m going to make that sometime soon. Sounds barry.

Made a brilliant aubergine curry. The sort of thing you need to serve with flatbread to dip it in as it doesn't make a huge amount, but if you make a decent grilled flatbread and put some veg up too, this'll be good for two.

Get the two biggest aubergines you can from the shop and cut them lengthways. Line a baking tray with foil, add a little oil and put the aubergines cut side down. Grill under a hot grill for 15 minutes or until the skin is charred, blistered and the flesh is soft and scoopable.

In the meantime in a frying pan put in about a tablespoon of butter and a tablespoon of oil. Add in a chopped onion and fry til transluscent and then add two or three chopped cloves of garlic, a tablespoon and a half of curry powder and two tablespoons of tomato paste. Fry for a couple of minutes til fragrant. Put to one side.


Scoop in the flesh of the aubergines and some freshly chopped parsley, mix really well and serve to scoop up with some nice grilled flatbread and some natural yoghurt.

Jambalaya is a favourite in my household. Simple one pot dish and very tasty.

This recipe but use a spicy Chorizo ring, add extra cayenne pepper and chilli's.

Something a bit more cooncil, salt n chilli chicken nuggets (personally prefer turkey dinosaurs if anyone is wondering but I'm just a big bairn) and potato waffles. Cook waffles and nuggets as usual, fry off some peppers, onions and carrots (pre boiled) in soy sauce and garlic oil, throw in waffles and nuggets once cooked and add some of that Chinese 7 spice you get in the supermarket and some herbs, garlic granules, wee bit more soy sauce, whatevers in the cupboard really. Absolutely magic and takes 20 mins tops if you've an air fryer

I bought a sous vide recently for making steak.

Literally the best steak I’ve ever eaten at home. Cook it perfect every time and it’s perfectly medium rare all the way through rather than medium rare in the very centre working it’s way out to medium well closer to the outside.

Pay the money for decent steak though and go to a butcher.

Had a couple of recipes from Simply Cook as a free gift when I ordered something online and I’m really impressed.

It’s a bit like Hello Fresh or Gusto, but they only send you the wee bits that you wouldn’t have in the cupboard. Last night we had steaks with a really nice Japanese style rub and rice with charred asparagus.

Couple of weeks ago we had masala spiced lamb chops.

Both really really good, if you get offered a free sample box give it a go.

Think the subscription is a tenner a box - four meals worth- and you can specify how often you want it.

Sausage meat is so under-rated as a component IMO.

I love a tomato past made with de-skinned sausages, especially something like a more fiery one.

Put in a soft taco with some guacamole or smashed avocado, your spiced sausage mix, fresh coriander and scrambled egg for an absolutely belting breakfast taco.

Probably too late now but normally when I make it, I use normal plain flour. However, that last time I had some strong bread flour that was about to go out of date, so I used that and the crust was so much better. Will definitely use the strong flour from now on.

Last night made a herby courgette gnocchi dish. Roasted two finely diced courgettes, garlic and a red onion, mashed it up a bit, added creme fraiche, herbs, cooked gnocchi, a bit of pasta water to help create a sauce then grilled it with torn mozzarella and grated parmesan.

Since it’s pancake day, I’m making pancakes for the main and pancakes for pudding.

Traditional scotch pancakes for afters.

For the main, I’m making boxty - an Irish potato pancake. I’m serving it with a creamy chicken and bacon filling, some salad and skinny fries.

I’ve had it a couple of times in Dublin so thought I’d try to recreate it.

Not quite. They have a fairly good YouTube channel but this is an app where you can choose a “pack” of three recipes a week. You then tick off all the ingredients you have in the cupboard that the recipes use and it creates you a shopping list. All of the perishable items are used up over the three recipes.

It’s a fiver a month for the app and also gives you access to digital versions of their cookbooks.

Spicy Asian tuna fish cakes ( tweaked Gordon Ramsay recipe) 1 tin Tuna steak, sliced water chestnuts, sliced spring onions, chopped mushrooms, small chopped red chilli( seeds removed ) finely chopped kafir lime leaves, grated fresh ginger, sprinkling of fish sauce, salt and pepper. Mix together and bind with 1 whisked whole egg, 2 if needled. Fry in very shallow oil for a few minutes on each side. Makes 3 or 4 fish cakes. Very tasty.

The same amount of normal noodles is 180 cals, so it is a significant reduction in calories just swapping these for normal noodles

Morrisons stock these as well asking with the "rice" variant.
They're certainly better than the cauli-rice & courgetti spaghetti abominations you can buy/make.
You're right about the initial whiff when you open the packet, but a couple of minutes in simmering water then added to Bolognese/Ragù, you'd never know the difference.

Brilliant stuff, got plenty of recipes to mix it up in the coming weeks. Managed to lose sixteen or seventeen pounds in the last fortnight through clean eating and being active every day and having a wide range of things to eat will hopefully make it a lot easier to keep it up :aok:

Trying Tom Kerridges healthy chicken tikka masala tonight. Chicken crown has been marinading overnight and just about to go into the oven at 120C for two hours. Will be cooled then blowtorched before making a sauce.

Edit: absolutely fantastic. Best curry I’ve cooked and not far off the best I’ve had. Worth the time and effort.

Right, this wasn't from a recipe so feel free to adjust quantities to taste. Been using all the tips from all the recipes I use to make a chicken pasta Alfredo that’s around 500-550 calories per portion.

Serves three (I cook for two but always make sure there's leftovers for lunch the next day)

2 medium sized chicken breasts, skinless, any bits of fat trimmed off
175g dry pasta
4x heaped tablespoons fat free natural yoghurt
1x heaped teaspoons low fat butter style spread
2x shallots, finely diced
3x cloves of garlic, finely diced
200ml chicken stock
1x teaspoon (heaped) cornflour)
Grated parmesan (the stronger the better)
Splash of skimmed milk
Tenderstem broccoli
Chicken coating:
Smoked paprika
Onion granules
Garlic granules
Salt
Pepper
Dried Oregano

METHOD:
- Trim and butterfly your chicken breast. Use about 1tsp of your herbs and spices and lightlycoat the chicken in them. Season and fry in a frying pan on medium heat with a couple of sprays of 1 calorie cooking spray. Fry on both sides til slightly charred and cooked through then transfer to a plate, cover with foil and leave to rest.
- Cook your pasta in salted boiling water as per packet instructions.

- Fry your diced shallots in the chicken pan with another spray or two of spray until translucent and add your garlic.
- Add the heaped teaspoon of low calorie butter spread and the cornflour, mix well. Add your stock and a splash of skimmed milk. Bring to a boil, reduce to a simmer and leave for 2-3 minutes to thicken. Season with salt and pepper
- Add your parmesan to taste into your sauce and stir well. Be sparing with it as we'll top the finished dish with a little parmesan as well for flavour.
- Remove your pan from the heat and set to one side.
- Once cooked, add a couple of cooking spoons of pasta water to your pasta sauce and stir in. Drain your pasta and keep it to one side. Boil a kettle
- Two tablespoons at a time, add your fat free yoghurt into the pasta sauce. Taste, adjust seasoning and stir your pasta through. Put back onto a very gentle heat to warm through again.
- Fill your pasta pan with water from the kettle and boil some tenderstem brocolli for three and a half minutes on a rolling boil.
- Slice your chicken.

- Plate your pasta, top with some of the sliced chicken and a small grating of parmesan and plenty of black pepper. Top with your brocolli.

Used the first picking of the rhubarb in the garden to make a rhubarb and custard crumble tart, slightly amended from a Jamie Oliver recipe on his YouTube channel. Used skimmed milk for the custard and sweetener in the rhubarb rather than sugar to lower the calorie level, but also topped it with crumble topping.

A scoop of light vanilla ice cream, strained the juice out of the rhubarb after stewing then reduced it down to a syrup to drizzle over it and it was absolutely mega.

Made a cracking healthy Chinese fakeaway tonight - made a thin two egg omelette, put to one side then diced and softened a red pepper, baby corn, broccoli, onion, leek, carrot and some pineapple using 1 calorie cooking spray. Added a finely chopped red chili, two cloves of garlic and root ginger along with half a teaspoon of five spice. Added a microwave pack of whole grain rice. Added soy sauce. Added a few raw king prawns and cooked through.

Made a cracking healthy Chinese fakeaway tonight - made a thin two egg omelette, put to one side then diced and softened a red pepper, baby corn, broccoli, onion, leek, carrot and some pineapple using 1 calorie cooking spray. Added a finely chopped red chili, two cloves of garlic and root ginger along with half a teaspoon of five spice. Added a microwave pack of whole grain rice. Added soy sauce. Added a few raw king prawns and cooked through.

The Chinese curry sauce you get in the supermarket is outstanding. I usually hate when people say that something tastes just like the real thing because 99% of the time it doesn’t - it might be good but it doesn’t taste the same - but that sauce really does.

It’s great for when you want something that feels a bit more indulgent but it’s not really.

You can buy little tubs of concentrate from Tesco that are just add water - it’s one of those things you’ll never be able to quite replicate so you may as well have a cheat for it. As Stubbsy 90+2 said, it's exactly the same as you get from a takeaway but you just need to add a little over the top to get the same feeling of a takeaway but much healthier.

I think the well fired rolls have been covered earlier in the thread, worth numerous mentions though.

Heavily buttered, then either a doorstep of cheddar cheese with onion, or GW Salt & Vinegar crisps (by themselves). 1980's school holidays food from the Gods! 😀

No, used to buy Maysan extra hot or Malaysian from the Chinese supermarket for the house. We use Dinaclass Irish Recipe Curry sauce in the Chippy.

If you’re from Edinburgh and looking for particular spices for curry’s, amma spices on Gorgie Road is brilliant. I’ve been a few times for some obscure spices from the Dishoom book.

3 day cold proofed dough made with Caputo Americana flour from Naples. Yester Farms Fior Di Latte, home made sauce made from Mutti San Marzano tomatoes. Cooked in the Ooni on a low heat (low for a pizza oven anyway!) for about 7 minutes.

Out the oven, topped with some torn basil, some broken up buratta (never cook the buratta) and a bit pecorino romano over the top. Sublime.

That sounds fabulous.

I'm cracking out the BBQ tomorrow to make a chicken gyros - will have three skewers through around twelve chicken thighs which will have been marinated overnight in yoghurt, garlic, cumin, paprika, a tiny bit of cinnamon, garam masala, pepper and lemon juice. Will turn regularly and carve off strips once cooked and will make flatbreads and serve with halloumi, salad, tzatziki and hot sauce.

Experimented with a pizza tonight, used the Chippy curry sauce instead of tomato for the base, topped with halloumi, grated mozzarella, jalapeños, sweetcorn and some torn pepperoni, it was outstanding.

Been making Turkish eggs in the morning - garlic 0% fat Greek yogurt, two poached eggs, fresh mint and just a little Aleppo pepper brown butter. Toasted mini seeded wrap to scoop it up.

About 325 calories and really quick.

Really thinly sliced rib eye marinated in a mix of gochujang paste, garlic, ginger, pear, sesame oil, soy sauce. Flash fried on a cast iron pan for about a minute each side and then topped with spring onion and sesame seeds. Was outstanding and only takes about 5-10 mins to make and about 10 mins to prepare the night before. It’s a Korean BBQ dish and is probably my favourite type of Asian cuisine.

Made some saag aloo tonight and also got some naan dough proving overnight in the fridge.

Going to make little bridie style pasty’s with it, stuffed with the curry and a bit of side salad with raita and mango chutney.

This is going to give you the best potato and leek soup you’ll ever have. The “hack” in this is something I seen online and it gives the most flavoursome, creamy potato and leek soup.

This is what I put in it:

Two medium leeks, chopped
Two cloves of garlic, grated
One sharing bag of salt and black pepper crisps, crushed. I used Tesco Finest but could be Mackies, could be kettle chips, or any similar equivalent
One chicken stock pot and one vegetable stock cube (it’s what I had)
Approx 750ml boiling water (you may need a little more)
About a teaspoon of dried dill

Method:
Soften your leeks and garlic.
Add the crisps and mix. Add the dill and stock cubes and most of the water.
Simmer and let the crisps rehydrate. Add more water if it looks like it’s getting too thick, whether it’s what you left over or just from the kettle.
After 15-20 minutes, blitz.

Restaurant quality, super delicious.

It’s Bulgogi not bulbogi but I make typos all the time too! Yes, it’s delicious and probably the most famous Korean dish along with kimchi, which you’d often have on the side with your bulgogi :agree:

I knew that. Must have been autocorrect :greengrin glad you brought it up though as I forgot I ever made this. Will need to make it again now.

Kim’s Bulgogi in Stockbridge is very good for takeaway bulgogi if you’re ever looking for it.

Thanks. My Korean friend says Ong Gi on brougham st near tollcross is the best in Edinburgh, there’s also a few Kalbi places on the Southside where the barbecue hot plate is on your table.

Winter is my favourite food season here in Germany. One of my favourite easy to make meals is Cabbage and mince.

Fry the mince with some onions and garlic using butter until the mince is brown and the onions are soft then add the cabbage and some beef stock mixed with white wine and cook until the chopped cabbage is soft. Shortly before serving add some chopped parsley and cream. Salt and pepper to taste.
