View Full Version : Anyone have a good recipe for tomato sauce for pasta?

I've got a kilo of tomatoes which I need to use but I've already made about 3 litres of soup with another 2k so sauce seems the next option.

There's a ton of recipes online, but I just wondered if anyone here had one they'd particularly recommend.

I'm not sure you'll get enough from your kilo to justify the effort involved. In fact tinned plum tomatoes are so cheap that I don't think I'd use them for this anyway.

You'll need to cook and process the tomatoes so that you're basically making passata which isn't a sauce, its one of the base ingredients for whichever sauce you want to make. Then you'll need to bottle the passata into sterilised containers if you are going to keep it for any length of time rather than just trying to scoff it all within a week.

I'd be tempted to 'sun dry' them in the oven and then jar them. They'll last for ages that way, you can flavour each batch with different spices and you could also give some away if they turn out well.

If you want a recipe for the Sunday family pasta sugo that's a different matter. :wink:

Whilst agreeing with you, I think that some tinned tomatoes are poor.

My wife insists on buying Tesco chopped tomatoes which are full of the off cuts from the factory floor ha ha. I always buy whole tinned tomatoes

and I will spend £1 a tin or so on the Cirio brand which I then chop as I need. Napolina are not bad; as a rule own brands are average.

Unless home grown tomatoes are particularly sweet I would not bother to save them to be honest.
