They're not exactly hacking lumps off them and keeping them alive! It's cultured cells grown in a lab.
Might work in the long run.

An excellent scientific solution to remediate the meat-intense consumer culture, while constraining the environmental impacts that the agroindustry has both locally and globally.
One of these California companies are part of a project we're working on with UCal Davis and their ideas and research facilities are superb!
My, I thought when I read the title it was going to be some barbaric practice of removing parts of the animal whilst it was still alive, phew

I'm a vegetarian so maybe a wee bit of biased but this is definitely the future.

From a sustainability point of view I think this is certainly the way to go if we want to feed the population with a diet based on meat.
Even if it does taste the exact same, it will probably get to the point where "real" meat becomes/becomes marketed as an exclusive novelty and drives it's price right up which will only increase the consumption of the "fake" alternative.
