Hi

A new dimension in .net history but why not!

SUNSHINE ON LEITH SOUP

I've just made this one – lovely Hibee green & white colour & delicious:

50g butter
1 large onion, chopped finely
300g spring onions, chopped finely
2 leeks, chopped finely
450g potato, diced
1200ml chicken stock
salt & pepper to taste


Saute the onions in the butter for 10 mins.
Add rest of ingredients & simmer until potato is soft.
Season to taste.

EAT!

I made a lovely sweet potato, carrot and chili soup today.

2l veg stock (I used 3 cubes)
2 onions
4 sweet potatoes
5/6 carrots
1 chili
1 teaspoon cumin
1 teaspoon coriander

fry onion for 5 minutes. Add in the rest of the veg and seasoning then fry at a low heat for another 5 then chuck in half the stock and bring to the boil. Simmer until veg is soft then blitz, add in the rest of the stock and simmer for another fifteen minute or so.

It's nippy and orange so in keeping with the spirit of the thread I dub it Nacho Novo soup.
