Princes Street used to have a bar/restaurant back in the 70s called Mons Meg Tavern (I think) roundabout where Debenhams is (if its still there!). Did a mean steak.

It could work if they had cover overhead and heaters outside the cafes / bars.

In the past, in general, if you had something to buy, you went to Princes Street or thereabouts. OK, jeans might have been Cockburn Street, records might have been the bridges, but if you were in town you would generally take a squint at the shops in Princes Street to see what there was.
Nowadays most purchases can be made in supermarkets, out of town zones with plenty parking and, above all, the Internet. Nowadays shopping is only a minor reason for going to the town centre.
I left Edinburgh almost 9 years ago and whenever I've been back I've been saddened by the nick of Princes Street. Something has to change.

Sounds like a good idea and the centre of Edinburgh is right up there with the most beautiful in Europe. I remember walking up the ramps at Waverley station with Mrs_S for her first visit to Edinburgh and I felt proud of how good it looks.
Agree with the previous posts that the tat shops have ruined Princes Street, as have the constant roadworks. I think a few bars with a view of the castle would be great, shame we can't do anything about the weather.

I think it's easy for folk that grew up in/around Edinburgh to overlook just how astonishing the view from Princes St is - it's a castle on top of a volcano FFS!

I've said before and i think on here, we don't know how lucky we are to stay in such a place, I've travelled to some beautiful cities in my time but the view from Princes Street taking in Arthurs Seat, the High Street and the Castle is the best I've ever seen
Princes Street on the other hand has been a total hovel for years, love the idea of bars, cafes and restaurants filling it up, other best thing they should have done was totally pedestrianise it and had the Farmers Market, Flower Market etc on the actual Street, never going to happen with the Tram fiasco though

I always found the lack of bars and dining places on Princes Street to be bonkers, so I'm all for it.

Agree with all of this.
I'd have put the trams or traffic or whatever on George St and Queen St, and taken advantage of the one massive attraction Edinburgh has over other cities, because Princes St has little to offer as a shopping destination. Most of the shops on the street are available just about everywhere else now, and there's way too much tat.
