    Chippy sauce

I've been missing Edinburgh haggis suppers and I was made up when I actually found a chip shop near me in York which sells it.

I bought a supper (not called that here) and it was ok, but it sorely missed chippy sauce which isn't available here.

I know it's a combination of vinegar and brown sauce but I don't know the ratio or if it's malt vinegar or something else?

    Can anyone advise?

Can’t advise on the sauce to vinegar ratio but we buy this ready made stuff - possibly from Tesco.

It’s Gold Star brown sauce, you will find most chippys use water rather than vinegar. You can actually buy Gold Star Chippy Sauce ready mixedin a table top bottle in supermarkets and online, it’s not far off the mixture we do as the gold star we buy in 5L cartons is thicker and ready for mixing. If want a genuine mixed in a chippy bottle, PM me your address and I will send you a bottle.

Question is, what mix do you use or is it a trade secret?

That's very generous of you, thanks.

Rather than put you to any trouble, I'll try to get a ready mixed Gold Star from Iceland. If they don't have it, or if it doesn't hit the mark, I'll take you up on the offer. Thanks again. 👍

Nah. Nectar of the gods. Most chippies don’t put anywhere near enough on these days.

    Said no one ever

When I was a kid the local chippy used to sell it in globe bottles.

Sure there was a thing that Cowan or Cosgrove said about chippy sauce and the vinegar. Can't remember what it was though!! Something to do with it's classification maybe

    Blasphemy.

I ask for my food drowned in the stuff. The lady in Pierinos had a great turn of phrase when I asked for that on a fish supper - “are you wanting to make it swim again?”

Wouldn’t say it was horrible, it has it’s place on a haggis or black pudding supper but apart from that it’s Salt n Vinegar for me.

After reading all this I could really go a fish supper, sometimes a really good fish supper needs is salt and that's it.

That’s it, fish supper with nothing on it and when I get home I will put my own salt on it, most chippies cover suppers in salt not nice, I want to taste the greasy fish and chips not it covered in chippy sauce and salt.

Sorry for upsetting you brown sauce lovers.

Chippy sauce on the chips and Tomato Ketchup on the fish for me, with a couple of pickled onions alongside.

Vinegar then salt otherwise the salt collects at the bottom of the container slooshing around the acetic acid !

    Agreed.

Salt only on fish and chips*.

Salt and chippy sauce on haggis and chips and anything else if I was to want it which I usually don't and I can't get down here anyway even if I did want it, which I don't, so that saves me making a decision, which is good.

I hope that makes my position clear.

*I'm ignoring the curry sauce option.
