We will be leaving Central London at roughly 11am on the Friday and returning after the match so should get back in the early hours of Saturday morning.

If anyone is interested just drop me a reply on here or leave me a message and I will get back asap, all we would ask is a share of petrol money, a small share of the cost of hiring the car (not much) and maybe a bit of banter to help pass the hours on the road!

There are many cosmopolitan pubs and strange eateries on Kentish Town Road, Camden, NW1/NW5. It’s always been a road that collects oddities. In the 1940s there was a Polish community there and they called it the Warsaw Corridor; in the 1960s the hippy push swaggered in and firmly stayed-put and it has never fully recovered. Amy Winehouse lived (and died) here, often seen propping-up the bar in the nearby and neighbouring Hawley Arms and there’s a police station at the top of the road, with Suggs and Madness somewhere in the middle. To this day it’s a good place for lock-ins, heroin and half-price hookers. But there’s also Pierre at Quinn’s tucked away for us discerning folks who appreciate fine dining, good football and vintage wines.

I realise Pierre may be deviating from his usual course by preparing more Prix Fixe French kaiseki type dishes for this derby match instead of dishes that us London Hibees would normally order off of the set menu as our standard fare, but hey... gotta have something new once in a while, right? This could be a memorable day in more ways than one!!

This coming week Pierre and his team are going to serve us a Menage a Trois of Japanese Kobocha Pumpkin themed dishes meant to amuse the mouth.

Our courses are as follows:

Pan-Roasted Short Rib of Beef with Panko Crusted Kabocha Pumpkin with Jack Daniels Rosemary Pumpkin Sauce and Pea Shoots.

This is the piece d'resistance of this menage a trois. This course is meant to showcase Pumpkin in two ways: Paired with Beef, and as a Bourbon-infused Sauce. The Pea Shoots used here link this course with the Curried Pumpkin dish. This course is also the Modern Interpretation in this regard, taking the Peppercorn-Crusted Cowboy-Style Beef Short Rib and pairing it with a Japanese Kabocha Katsu, with a Sauce based on Jack Daniels Bourbon.

Cold Curried Roast Kabocha Pumpkin with Peas, Red Onions, Mint and Yoghurt

This course is designed to showcase Kobocha Pumpkin in an Exotic Traditional dish, as well as provide the Massamun Curry flavour to go with the Beef Short Rib and Kabocha Katsu of the First Course. This course is also a distinct temperature contrast with the first course, being a cold dish. This course is also a distinct texture contrast, being a simmered, tender preparation.

Raw Kabocha Pumpkin and Daikon Ribbon Salad with Cilantro in Mirin-Lime-Sambal Dressing

This Raw Third Course is a stark contrast to the first two preparations. This course is thinly shaved ribbons of Raw Kabocha Pumpkin and Marinated Daikon with Coriander leaves. That's pretty Pierre, if you ask me. It's Crunchy, Fresh, Sweet, Sour and Bitter, and Bright.

This weeks house wine will be a 2011 L’Hydropathe Elite Rose, Domaine Sainte Lucie - £18 per bottle and supplied from the fine folks at Lea and Sandeman.

For the uninitiated looking in, London goes right to left; its latitudes are more prosperous than its longitudes. The city flows east-west; north-south is downhill, shabbier, grubbier. Maybe it’s because a river runs through it. Perhaps it’s some Camden hippy bile, but the city ebbs and flows with the sun.

Kentish Town Road where Quinn’s is sited runs north-south, impervious to the improvements and aesthetics of the über-expensive real estate that reclines next door. It connects to the stucco wealth of Regents Park and with the genteel remittances of Hampstead, and to a lesser degree, Highgate. Camden is the last redoubt of odd shops and market stalls selling gimpy things that make you wonder who could ever want one of those things in the first place. It has a legion of shops and cafes that offer pizzakebabburgerfriedchicken’n’chipsnoodles all in the one Styrofoam box. And breaking the stereotypical Styrofoam mould – there’s Pierre at Quinn’s; snugly hidden away from the masses and bohemian lo-life that invariably plagues the area.

Quinn’s is the real thing, a bistro and restaurant started by real Frenchmen who have the skill, the provenance and the taste. This is the same team that opened Racine on Brompton Road and Le Colombier in Chelsea, two of London’s finest French dining rooms.

This week Pierre is serving us a starter of snails with lardo, garlic and a parsley velouté with pain au levain a la Poilâne. This dish (together with the full-time score) will undoubtedly be another unassumingly memorable triumph. For the main course there’s a Beef Contra Fillet with Bourdelaise Sauce and Bone-Marrow Butter, served with Rosemary & Garlic Chive Crushed Potatoes. Desert will be a simple Parfait of Strawberries and Pierre’s famous Crêpe Suzette. Once again, truffle shavings are at £5 per gram.

This weeks wine is an unusual Greek offering from the Diamantakis Winery – Vidiano 2010 Vino Collapso – which has a hint of honey, almonds and a slight smokiness. £17.99 supplied by the fine folks at Berry Bros & Rudd.

See you there!

Even on the rare occasions when one has nothing else in the fridge, there is always an onion, and being French, Pierre certainly knows his onions!

Pierre has emphasised to me many times that onions are like a culinary Heathrow Airport – they can take you to thousands of edible destinations. How many dishes have we eaten over the years at Quinn’s – soups, stews, risottos, paellas, pilaffs, salads, sauces, curries, chutneys, marmalades – that start with the instruction to soften an onion in oil or butter? That slow change from crisp acidity to supple sweetness is one of the most satisfying transformations in French cooking. Even heaped onto a piece of toast with a little foie gras, the resulting jumble is a thing of deliciousness.

The specific Roscoff bulbs that Pierre uses now will have been harvested last summer, then carefully dried so the inner layers keep their pungent freshness. That in itself is a pretty amazing thing and has a fundamental effect on the food that Pierre cooks and what we London Hibees eat, yet we so often think of onions as a sort of Shefki Kuqi – a bit-part player. This week, Pierre is giving the Oignon de Roscoff the staring role they rightly deserve.

To start, we’re going to be served Oignon de Roscoff Soup with Cider. This is a cream of onion soup, rather than the traditional beefy variety. To follow there’s Braised Beef with Oignons de Roscoff. A lovely warming, peppery onion-rich stew that’s ideal for this time of year. There will be a selection of cheeses and after-dinner coffee will be served. Truffle shavings are still available at £5 per gram.

This week’s guest wine is courtesy of The Wine Society; Welnert Carrascal 2007 priced at a very reasonable £12.99 per bottle.

Here are another couple of recent reviews that Pierre and his team have received.

“This is a deservedly popular restaurant, offering a very reasonable set price lunch and early dinner, as well as a more varied and sophisticated table d'hote menu.” Trip Advisor

“…uncomplicated, fabulously robust Classic French menu that’s worth every penny” Michelin Guide

See you all on Sunday!

In 2010 Pierre was the winner of the Craft Guild National Chef of the Year, having been a finalist in 2008. Earlier in his career, he also won the Roux Scholarship. Pierre has one of the best CVs in the country, having worked with some of the world's top Michelin-starred chefs including Raymond Blanc at Le Manoir aux Quat'Saisons, Michel Roux Jr. at Le Gavroche, Gordon Ramsay at L'Aubergine, plus Pierre Gagnaire and Thomas Keller, to mention just a few. He has also completed various deployments at both The Savoy and Claridge's in London, and at the three Michelin Star Restaurant Régis et Jacques Marcon near Lyon. Although still young, Pierre has already held Chef posts at the Sandy Lane Hotel, Barbados and The Ritz, London. He has also worked in Japan and Dubai and now finds himself firmly ensconced at Quinn’s.

His secret is combining the best fresh seasonal ingredients with the culinary influences of the Côte d’Azur and neighbouring Liguria, Chef Patron Pierre and his team offers us London Hibees an inspired yet simple and delicious interpretation of French Mediterranean and Niçoise cuisine.

On a busy weeknight such as next Monday, Pierre at Quinn’s will have all the relaxed bustle and hum of a hit French brasserie, yet as the international crowd and full reservations book shows, this edge-of-Camden spot has become a place of pilgrimage for us South East based Hibees and lovers of fine dining.

Chef Pierre is arguably France’s most successful culinary export, but don’t come expecting wattle table decorations and waiters in shorts - even the east-west fusion that characterised upmarket French cooking in the 1980s is almost imperceptible. Yes, there’s Japanese herb shiso in Mondays unmissable dish of flame-grilled mackerel with smooth avocado sauce; we’ll also be served salted cherry blossom with roast leg and confit breast of pigeon (not locally sourced); and kaffir lime in a mango millefeuille. Don’t just take my word for it….

“Pierre....is widely regarded as the finest French chef with the decency to be British”
Tim Hayward - The Guardian

“A classic restaurant, driven by passion, knowledge and fierce attention to detail. If you haven’t been to Quinn’s yet, then I highly recommend you go.”
A.A. Gill - The Sunday Times

"...a tribute to Pierre's skill, his appreciation of tradition and his immaculate taste"
Matthew Fort - Daily Mail

See you on Monday

In its busy Camden/Kentish Town location, Quinn’s is a surprisingly bourgeois French restaurant whose classic style will come as no surprise to those who’ve followed Hibs and head chef, Pierre since we relocated there; quality is good, standards are high.

Pierre is a man who knows a bit about your classic Gallic restaurant. Indeed, it runs in the family. His brother Didier runs Le Colombier, in Chelsea, which is about as close to a plain-vanilla Parisian restaurant as you’ll find.

With Pierre’s name, quite literally, above the door, it’s no surprise that ‘Pierre at Quinn’s’ is very much in classic mould: read the menu if you must, but you’ve probably already got a pretty shrewd idea what’s on it. You‘ve probably also got an inkling about the décor – muted, stately and well-spaced.

Almost everything we have eaten over the years has been good, and Sundays menu looks promising. We're keeping it simple this week with one dish only each course from the A la Carte menu; focusing once again on the classical French sauce called Beurre Blanc (accompanied with shellfish). To start we have Seared Scallops in Pomegranate Beurre Rouge with Ikura Caviar, Pickled Ginger and Radish Sprouts: A fine interpretation of French-Japanese cuisine; and a fine example in the making of classical French Beurre Blanc Sauce.

Main course will be a Rustic Seafood Pasta containing Tiger Prawns, Sea Scallops, Mussels, Manila Clams, Monkfish, and Squid in a light rustic seaside Tomato Garlic Beurre Blanc. This dish is exactly as one would find anywhere along the Southern French coastline. Yum.

You won’t get more a more classic dish than Crêpes Suzettes as our desert.

This weeks house wine is a 2011 Côtes de Provence - Château du Galoupet at £24.50 a bottle.

Bravo Pierre and thank you for the photos.

Head Chef Pierre's Michelin star menus are always seasonal and classically French with a distinctively light and modern touch and Sundays menu will hopefully reflect this.

Pierre’s hors d’oeuvres are a great way to start an after-match party. His little bites of haute cuisine are so wonderfully adept at showcasing his culinary creativity. To start we’ll be served the timeless, seafood entrée, Coquilles Saint-Jacques. He’ll also serve a Pissaladière, that classic onion tartlet made with olives, anchovies, and fresh herbs.

Main courses are Cognac Shrimp with Beurre Blanc Sauce. An easy shrimp main dish that is quick and easy to prepare. This will be served with couscous. Pierre’s coq is legendary the world over, so there’s French Roasted Chicken with Cabbage and Prunes served with buttered new potatoes. Desert will be a simple Chocolate Grand Marnier Crepe.

As an aside, Quinn’s are celebrating truffle season with truffle shavings available to pair with each course at £5 per gram from now through until March 2013.

This weeks house wine is 2007 Bon Courage Colombard. An absolute steal at £9.99 a bottle.

See you there!

I'd like to apologise on behalf of Pierre and his team to the folks that didn't get some of the suckling pig. We simply didn't foresee these sort of numbers attending and we will make sure that there's no repetition in our forthcoming matches.

Well done to all.

Sat down with Pierre yesterday and we talked through the menu for the New Year derby at Tynie. The food gods are looking down on us for this match as the game is a 7.45pm kick-off, giving Pierre and his team plenty of time to prepare something a wee bit special for what's sure to be a large gathering.

We've been allocated the orangery, which gives us access to the covered patio. To start, we'll be served peperonata with grilled squid. This sweet-sharp Mediterranean cooked salad of peppers and onions is a fantastic prelude to our main, which is a whole 14 kg suckling pig, which will be cooked outside on the charcoal rotisserie. This will be served with an Asian herb, papaya & coconut salad, some chicken Pho-Ga with fragrant herbs, Bo la lot: ground beef in wild pepper leaves, cumin roasted sweet potatoes, steamed fragrant rice and stir fried kailan with ginger, garlic & chilli. Desert will be a simple chocolate & lime crème brulée with an Asian fresh fruit salad.

(To be confirmed) but the wine will hopefully be Cimarosa New Zealand Marlborough Sauvignon Blanc - Should be circa £9 a bottle.

It's a busy time of year for Vinnie and his team at Quinn's, with Sunday probably being their busiest day of the year in the bar, restaurant and orangery, however we've been allocated the corner lounge area for the match, so turn up early if you want a seat.

Pierre is going to serve us a kind of alternative Christmas lunch this week. It's not meant to upstage our own turkey and trimmings, as the traditional festive feast is an immovable one for many, and Pierre isn't going to challenge it's supremacy from his kitchen at Quinn's. Instead, he's preparing us a menu that's intended as one of those 'other' meals that happen at this time of year - the boozy lunch with friends before everyone goes their separate ways.

Starter will be fusilli with courgette, saffron and pine nuts served on some wilted greens. Main course is roast haunch of wild venison with quinces, served with savoy cabbage and celeriac puree. Desert will be prune and brandy ice cream with orance and cinnamon caramel. Please be patient as there may be a delay between courses (nothing new there I hear you cry).

This weeks house wine is Pencarrow Pinot Noir Martinborough, 2012. £12.50 per bottle and supplied by the trusted folks at Justerinis.

See you on Sunday.

I got a call from a furious, Pierre. Seemingly, someone had the audacity to send back his roast quail with caramelised walnuts that he served after the Motherwell match, stating that it was 'boney'. Pierre isn't one for taking criticism well and it was moi that took his wrath.

Anyway, we're on the box again this Sunday and Pierre and his team will be starting off with a sure-fire 'green winner' - pea soup. This will be followed by home-cured salmon with pickled vegetables and stewed Kentish Town apples. Main course will be skirt steak with coriander and mint sauce (I like the green theme, Pierre), served on a bed of savoy cabbage with potatoes dauphinoise. This weeks house wine is Rustenberg John X Merriman 2009 - £10.99 per 750ml bottle.

Finally, for those who are regulars, Sunday lunch is Pierre's busiest time with al la carte food being served in both the restaurant, piano bar and patio. Please allow a little extra patience as our food is cooked to order.

See you Sunday.
